Field-level security controls who can read or modify specific fields, even when they can access the underlying record.

Field-level security controls who can read or modify specific fields, even when they can access the underlying record. Hiding a field in a screen is not necessarily an access restriction.
In Odoo
Odoo’s developer security documentation describes group restrictions on fields, in addition to model rights and record rules. A restricted field is removed from field metadata for unauthorized users and rejected on explicit access; a merely invisible view element is not equivalent protection.
