In general ERP practice
In an ERP, transaction-specific tax and account mapping adapts default accounting treatment to a particular business situation. The same product may require different treatment depending on the customer, supplier or type of transaction.
Fiscal position is Odoo’s name for this configuration concept; it is not a universal name used by every ERP. The underlying purpose is to apply approved accounting rules consistently while keeping the product’s normal defaults reusable.
In Odoo
Odoo fiscal positions adapt taxes and income or expense accounts for transactions. A position can be assigned to a partner, selected manually or detected automatically using configured conditions.
In the Odoo 19 documentation, tax mapping is configured on the taxes and uses fiscal positions. Account mapping replaces a product or category’s default account with a specified alternative. Several positions may be supplied by a localisation package, but the resulting configuration still needs to match the business’s actual transactions.

Review the result on the document
A configured position is useful only if it is selected on the intended transactions and produces the expected taxes and accounts. Validate a representative document for each scenario; a descriptive position name does not prove that its mappings are correct.
